Chanterelle toast with avocado

The creative chef and tour enthusiast Pontus Karén shows you how to make chanterelle toast with fluffy lemon cream, goat's cheese and avocado out in nature.

What you need:

For 2 people you need:

  • 2 mushrooms
  • About 100g frozen chanterelles (if you can't find fresh ones in the forest)
  • 2 fiber-rich slices of bread
  • 2 tablespoons of crème fraiche
  • 1 teaspoon of salt
  • 1 lemon
  • 1 avocado
  • Some goat cheese
  • Some chili flakes
  • Butter for frying

What you need to do:

Do this before you go out:

  1. Put the crème fraiche in a bowl
  2. Grate in some lemon peel and squeeze in some lemon juice
  3. Beat the crème fraiche with a whisk until it becomes fluffy and firm. Pack in a bag.

Once you've gone on a trip:

  1. Cut up the mushrooms and fry them together with the chanterelles in a good amount of butter. Fry until they get a nice color and surface
  2. Season with a little chilli flakes and salt
  3. Warm up the bread slices by placing them on top of the mushroom when it has finished cooking
